Hotel Saravana Bhavan Style Kurma

I recently came across this amazing method of cooking called One Pot One Shot(OPOS). I have tried many dishes the OPOS way but this HSB Style Kurma is the best ever dish. Do you believe, you can cook a restaurant style kurma in less than 10 minutes? Yes, you definitely can. Here's the magic of OPOS.



Ingredients:

1. Mix Veggies(Cubed)- 1 bowl (Potato, Capsicum, Peas, Carrot, Beans)
2. Oil- 1 tsp
3. Onion- 1 chopped
4. Tomato- 1 chopped
5. Coriander - For garnishing
6. Milk- half cup

For the ground paste:

1. Coconut- 1 cup scrapped
2. Green chilly- 1
3. Cashews- About 10
4. Khus Khus- 1 tsp (Optional)

Method:

1. Grind coconut, cashews, green chilly and khus khus into a thick paste. It should be very thick to avoid the cooker bottom burning.

2. In a 2l pressure cooker, add 1 tsp oil and 2 tblsp water. Add the chopped onions on one side and chopped tomatoes on the other half as shown in the below pic.



3. Now layer the chopped veggies above this. Add some salt above the veggies. Now layer the thick ground paste above this. Please note the ground paste should not touch the bottom of the cooker.



4. Close the cooker and cook on high flame for 3 whistles. Once pressure settles, open and add half a cup of milk.


5. Garnish with coriander.



And, the aromatic hotel style kurma is ready in less than 10 minutes. Serve hot with rotis, Naan or Pulav.



Notes:

1. Replace oil with butter/ghee for richer taste
2. You can add some fresh cream along with milk.
3. For vegan version, replace milk with cashew milk or coconut milk or just dilute with water.
